Using the Jerusalem Artichokes has definitely made the Nori rolls sweeter. Jerusalem Artichoke can be juiced and used as a sweetner with a very minimal effect of the glycemic index. We use it as a liquid sweetner in place of agave in recipes due to agaves effects on the body.

I like to have a lot of room to stir my sauce into the carrot and beet spiraled strands, so usually when I eat this I pour it into a larger bowl. I am always amazed how full the bowl is... for a minute!

Lately this is the dish that my toddler is requesting too. Although the one she "makes" is "cauliflower nori and sprouts for you"

Harvesting at Wobbly Cart

It's nearing the end of the season at Wobbly Cart Farming Collective and it's neighbors Rising River and Helsing Junction. I recently spent a blissful two hours in the rain harvesting kale. My little bunny snoozed and I filled boxes with lacinato and wild garden kale. The silence in the field was a lovely reminder of the closing in and winding down of the new season

We had so much fun giving away delicious local food to our community at the Eastside Olympia Food co-op yesterday! After we emptied the cooler, Eraelah and I harvested Wild Garden Kale and Red Chard from Wobbly Cart for our new line of Kale Chips!
